Pork Country Rib Roast
Pre-heat the oven to 375°F.
Remove the roast from refrigeration to temper for about 30 minutes before roasting. Place the roast in a pan fitted with a rack with its fat side facing up.
Put the pan in the middle of the oven and roast for 20 to 25 minutes or until it the fat has caramelized and turned a deep golden brown.
Lower the temperature of the oven to 300°F and let the roast cook for another 30 to 40 minutes or until a thermometer inserted right into the middle of the loin registers 140°F.
Remove from the oven and let the roast rest for 20 minutes before carving.
